Hello laurentroman and welcome to the forum.

First of all - don't panic. :) We should be able to get you going.

You have SampleTank 3 (ST3) and Miroslav Philharmonik 2 (MP2) installed. When you open ST3 you should be able to see its instruments and MP2's instruments listed in the Browser. Is that correct?

If you have, say, 5 instruments loaded into the first 5 slots in ST3, then each instrument is driven by ("listening to") MIDI notes on a different MIDI channel. The channel associated with the instrument is shown in the "CH" column. Details are in the ST3 User Guide.

To get your keyboard to play the instrument in slot 2 you need to change the keyboard to send MID on MIDI channel 2. To play the 4th instrument change the keyboard to MIDI channel 4. And so on. Have a look in the keyboard's User guide to find out how.

ST3 and MP2 are sample playback products. They do not record anything. To record your keyboard playing you would need a Digital Audio Workstation" (DAW) - some good ones for beginners are free; three that spring to mind are
Bitwig 8-track: https://www.bitwig.com/en/8-track
Presonus Studio One Prime: https://shop.presonus.com/Studio-One-4-Prime
Tracxktion v7: https://www.tracktion.com/products/t7-daw

And you can spend hundreds of $ for other products.

Which MIDI keyboard are you using? And, are you using ST3 or MP2 as standalone programs or within a DAW?

Some MIDI keyboards have a split function, so that, for example, keys up to a certain note will send notes on one MIDI channel and keys above that note will send notes on a different MIDI channel.

If that feature is used then you could play 2 different instruments at a time; otherwise you can only play one.

If you want to play several instruments at once, then you need a DAW. Did you look at any that I listed above? Here is an example, using 5 separate instances of ST3 to play 30 different instruments:

The DAW sends MIDI on up to 16 different MID channels to each ST3. The yellow and green blocks are previously-recorded / edited MIDI notes.

If I want to add another instrument I add a track to Record my MIDI keyboard-playing, connect it to an ST3, load the new instrument into that ST3 and click Record. The DAW plays back the 30 existing instruments, records my keyboard playing on the new track (and plays that instrument too).
