I'd like to see some really esoteric stuff:
Garnet Herzog - tube preamp/distortion generator co-designed by Randy Bachman. The American Woman tone as well as a number of Guess Who hits. Also championed by Gordie Johnson of Big Sugar.
Gibson LAB L5. Early Ty Tabor/King's X tone crushes.
Magnatone combo. The Vibrato and reverb from that amp is unreal.
Fender Red Knob Twin (aka The Evil Twin)
The little Supro combo Jimmy Page used on the first Led Zeppelin album. This one really is a no-brainer.

here's a really off the wall idea - the ability to set battery levels on stompboxes, especially distortion and fuzzes, which would change the quality of the output. Baby Audio recently put that feature on their BA-1 synth (their Yamaha CSO1 clone), why not model that for pedals? It's said that when Duane Allman was a studio musician he liked using nearly dead batteries in a fuzztone to get some really nasty distortion.
Also - a number of battery-powered amps. Like a Pignose. Or even some cheap and cheerful ones like the Fender Mini Deluxe and the Mini Orange Crush.
