I am experiencing a problem with the swell stomp and rack effect: the swell effect is working great but the initial attack of a note or a strum is also clearly heard.

Does anyone experience the same, and is there a way to remedy this?

Yes, I have the same problem. Swell pedal in [mod edit: another product] is completely hassle-free because it is much more sensitive. AmpliTube Swell pedal works desirably only when the signal is really strong, so sometimes I need to increase my volume a quite a bit before the pedal.
Definitely, AT5 Swell pedal sensitivity knob should have a much greater range.

My problem is a little different. I can only get the swell effect to work with certain amps like Red Pig. Not sure what's going on, but can I set it up to where the swell fx works universally across A5 amps and cabs, and with other pedals and racks? Please advise. Thanks
