In the meantime, try these steps when you can and let support know your results. These should help resolve your issues, as it sounds like you just need to adjust some settings in AmpliTube.
1) Open AmpliTube for iOS
2) Go to the Recorder (DAW or MIXER) pages using the Tape Cassette or Tape Recorder symbol
3) Inside here find the 'Projects' list (On iPad this is clearly labelled, on iPhone this is accessible by tapping the folder with a musical note inside of it)
4) Tap the "+" button inside the Project list to create a new project
5) Check your signal now to see if this helps, most if not all AmpliTube settings should be resets
